Job Title:                   DELI & CONCESSIONS MANAGER


Rate of Pay:               DOE

Shift:                          Full-time, year round salaried position



Greet and interact with guests to provide exceptional service in a casual and professional environment. Spend 80% of time working in the Sundance Deli with staff and guests.  Responsible for the day to day operation of the Deli.  Organize and manage Summer & Winter concession operations (Creekside, Bearclaw, Backstage, and Summer Theatre) to ensure quality fast food and beverages in a friendly, efficient and professional environment.

ESSENTIAL DUTIES AND RESPONSIBILITIES include the following. Other duties may be assigned.


Warmly greet and engage each guest.

Assist guests with selection and purchases of prepared or packaged grocery/deli items.

Provide helpful and friendly service to guest.

Demonstrate knowledge of prepared and packaged products to better serve guests.

Prepare food products (i.e., sandwiches, picnics to go, coffee, drinks) following sanitation procedures.

Enter orders in point of sale system, collect payment, provide correct change, and obtain signatures as appropriate for payment type.

Maintain an accurate and balanced bank.

Answer phones exhibiting proper phone etiquette and professionalism.

Take phone orders ensuring accuracy and timeliness of delivery or pick up.

Perform or assign and inspect all necessary opening and closing responsibilities to ensure efficient operations.

Demonstrate knowledge about all aspects of the resort (i.e., lodging, dining, mountain recreation, activities) to effectively answer guest inquiries.

Meet or exceed property guest survey programs.

Hire, train, and supervise staff.

Develop training materials to develop staff.

Train new employees to ensure quality of product and service.

Create weekly schedule in accordance with budget and business levels.

Portray knowledge, understanding, and compliance of all applicable Utah liquor and food service laws.

Set a good example and ensure that all safety and sanitation standards are met.

Obtain and document staff food handler permits, alcohol service permits, and any other licenses required by law.

Create and administer Deli policies and procedures.

Manage inventory including aesthetics, ordering, stocking, and rotation of products.

Work closely with General Store Manager in regards to product displays.

Oversee In-Room Dining operation.

Responsible for Revenue and efficiencies in accordance to the Yearly Budget.

Work with the Marketing team in collateral to enhance sales on property and the local community.

Responsible for cleanliness of front and back of house.


Oversee the hiring, scheduling, training and supervision of all Concessions employees.

Oversee day to day operations of Concessions.          

Ensure employees are trained and follow Resort and Food & Beverage standards and procedures.

Oversee the opening of the respective outlet(s) at the beginning of each season, maintenance of the venues, and closing of venues with proper notes from the season as well as leaving the location clean and maintenance free.

Ensure opening and closing responsibilities are proficiently completed including cleaning, vacuuming, emptying trash, stocking shelves, daily accounting and cashiering duties, and completing other necessary tasks.

Knowledge and compliance of Utah liquor laws.

Responsible for ensuring that all Concessions staff have current Food Handlers Permit, alcohol certification, and any other applicable certifications/licenses required by law.

Maintain an accurate and balanced bank.

Interact with guests and ensure that proper sequence of service is followed for all Concessions guests.        

Assist in ordering, stocking, establishing pars and monthly inventories Concessions operations.

Deliver quality products in a clean and organized facility.

Work closely with guests and employees. 

Handle guest complaints, accept and channel guest feed-back on food and operations to direct Manager, give constructive input to employees on operations.


Directly supervises 2-7 supervisors and around 30 employees in the Deli and Concessions outlets.

Carry out supervisory responsibilities in accordance with the organization's policies and applicable laws. Responsibilities include interviewing, hiring, and training employees; planning, assigning, and directing work; appraising performance; rewarding and disciplining employees; addressing complaints and resolving problems.

Complete all applicable paperwork for the above responsibilities and submit to HR in a timely manner.

High school diploma or general education degree (GED); or one to two years Supervisory experience (preferably in a deli setting, food & beverage, or retail) and/or training; or equivalent combination of education and experience.

Point of sale system experience.  Proficiency in word processing, spreadsheets, internet navigation and electronic mail.


Must possess or obtain a valid food handlers permit within 30 days of employment.

Must possess or obtain a valid alcohol service permit within 30 days of employment


Must be 21 years of age or older
